Hygiene chemistry is the science of preventing disease and promoting human health in a broad domain ranging from food to environment. Our research themes are described below. Physicochemical properties were investigated to assess the potential of starches from the residual crude drugs after extraction. Uptake of heterocyclic aromatic amines, polycyclic aromatic amines, and nitrosamines by insoluble dietary fibers was measured in artificial gastric juice and artificial intestinal juice. The quantity relationship between Si and Ca in urine from women suspected of osteoporosis was investigated, and it was confirmed that Si participates in bone metabolism.
At our laboratory, the spirit of inquiry into natural sciences is cherished and promoted by a liberal research life, and a desire for knowledge is considered part of the basic personality structure of a pharmacist.
